A 28 cm frying pan offers plenty of space for several portions of vegetables, meat, eggs or stir-fries. At the same time, it usually fits on a hob ring of around 22 cm in diameter. However, choosing the right one often seems simpler than it really is: coatings, hob types, temperature ratings and cleaning instructions vary considerably.
A pan may be suitable for gas, electric and ceramic hobs, but not automatically for induction. What matters is a magnetic, flat-lying pan base. For an induction frying pan 28 cm, the induction suitability must be explicitly stated in the product details. The actual base diameter is also important: a large pan with a small induction base may not use the hob surface efficiently.
A coated 28 cm frying pan is not automatically designed for very high temperatures. Non-stick coatings should generally not be heated empty or at high heat for extended periods. Terms like "heat-resistant" often refer to a specific range or to individual components. If using the pan in the oven, you must check the maximum temperature and the handle's suitability separately.
A dishwasher-safe frying pan may be allowed in the machine according to the manufacturer, but detergent, high temperatures and mechanical stress can wear the coating more than gentle hand washing. To extend its lifespan, let the pan cool down and use warm water, mild washing-up liquid and a soft sponge.
For a non-stick frying pan 28 cm, the specific type of coating should be stated. PTFE coatings are common for low-fat cooking of delicate foods such as eggs or fish. Ceramic coatings are often sold as a 28 cm ceramic frying pan and may be designed for different temperature ranges depending on the model.
Look for the following details:
A "scratch-resistant pan" should still not be used with metal cutlery, knives or abrasive scourers. Manufacturer claims about scratch resistance do not replace care instructions.
Check before buying whether the pan is suitable for induction, gas, electric and ceramic hobs. For a coated pan suitable for all hob types, the oven suitability should also be stated separately. Some models are only approved for the oven up to 160 °C or 230 °C, while others must not go in the oven at all.
A 28 cm pan with lid is practical for sauces, braised dishes and stews. The lid retains heat and moisture, but makes the pan heavier and requires extra storage space. For glass lids, check the handle, rim and maximum temperature.
A lightweight aluminium frying pan is easy to manoeuvre and toss with. A heavier multi-layer or stainless steel body, on the other hand, can sit more stably on the hob. A high rim is useful for sauces and one-pot meals, while a slanted rim makes tossing and pouring easier.
Why this product fits the profile: This 28 cm pan combines an aluminium body with a ceramic coating and is stated to be suitable for induction, gas and electric hobs. Its light weight makes daily handling easier.
The hob compatibility and the recommendation for wood, silicone or plastic utensils are clearly stated. The pan should still not be overheated when empty.
Ceramic coating, ergonomic Bakelite handle and suitability for multiple hob types; stated as dishwasher-safe by the supplier.
Why this product fits the profile: The SIGMA-Clad construction with an aluminium core, a riveted stainless steel handle and a Duraslide Ultra PTFE coating are aimed at households that value precise material and temperature specifications.
The product data lists hob types, an oven limit of 230 °C and specific care instructions. Prolonged empty heating and metal utensils should be avoided.
Suitable for induction, oven-safe up to 230 °C and dishwasher-safe; hand washing is recommended to protect the coating.
Why this product fits the profile: The high rim, two handles and matching glass lid support braised dishes, sauces, pasta and larger portions in a family household.
The lid, rim height and suitability for all hob types are explicitly stated. The coating should still be cared for with suitable utensils and without abrasive cleaners.
4.5 mm thick KERAVIS-Extreme coating, glass lid and Thermopoint indicator according to the product description; dishwasher-safe.
Why this product fits the profile: The thick-walled aluminium body and three-layer Keravis non-stick coating are designed for regular use with meat, vegetables and delicate ingredients.
The specifications explicitly mention induction as well as other hob types. The surface is stated by the manufacturer to be free of PFOA, nickel and heavy metals; hand washing is recommended.
Aluminium construction, three-layer Keravis coating, heat-insulated handle and suitability for all common hob types.

That depends not only on the top diameter. Check whether the model is explicitly marked as induction-compatible and what base diameter the manufacturer specifies. For many 28 cm models, this is smaller than the top rim of the pan.
A fixed lifespan cannot be reliably stated for every model. It depends on heat, cooking utensils, cleaning and frequency of use. Low to medium temperatures, hand washing and avoiding metal objects can protect the coating. If visible flaking or deep scratches appear, the pan should no longer be used.
Ceramic coatings are designed for low-fat cooking, provided the product specifications allow for it. A small amount of oil may still be sensible depending on the food and temperature. The key factors remain an appropriate heat setting and care according to the manufacturer's instructions.
