28 cm frying pan: a buying guide to induction, coatings and everyday use

A 28 cm frying pan fits many standard hobs and offers plenty of room for vegetables, eggs, meat or dishes for several people. However, models can vary considerably in their materials, coatings, temperature limits and care requirements.

Many disappointing purchases aren’t down to the diameter, but to unclear product information. For example, a pan may be advertised as “suitable for all hob types” even though it isn’t oven-safe. And a supposedly scratch-resistant surface doesn’t replace clear information about temperature limits and recommended cleaning.

Common pitfalls when buying a 28 cm frying pan

1. Induction compatibility isn’t properly checked

An aluminium pan won’t necessarily work on an induction hob. It needs a magnetic base, usually made of stainless steel or with an integrated induction plate. Look for a clear statement such as “suitable for induction” and check the manufacturer’s information if you’re unsure.

2. Coating and temperature limits are confused

A coated frying pan can make it easier to release food and help you cook with less oil. However, that doesn’t mean it’s suitable for high temperatures or oven use. Plastic or Bakelite handles often limit oven use. Some models, for example, have a maximum temperature of 150, 160 or 180°C.

3. Dishwasher-safe doesn’t automatically mean long-lasting

A dishwasher-safe frying pan can go in the dishwasher according to the product information, but detergents, high temperatures and mechanical wear can put more strain on the surface than gentle handwashing. So it’s worth checking the care instructions for coated pans. A stainless steel pan is often easier to care for in this respect, but needs different temperature and oil control when searing.

The most important things to consider

Diameter, base and shape

The 28 cm measurement usually refers to the diameter of the top rim, not necessarily the usable cooking surface. The base diameter is what matters for heat transfer. It should match the size of your hob as closely as possible. A base that’s too small won’t make efficient use of a large hob, while an overhanging rim can affect heat distribution.

A high-sided, deep pan is useful for larger portions, sauces and braised dishes. A shallow crêpe pan, on the other hand, makes it easier to flip crêpes and spread batter. The term 28 cm non-stick pan doesn’t tell you the exact shape or height of the sides.

Materials: aluminium, stainless steel or a hybrid construction

An aluminium pan is usually relatively lightweight and heats up quickly. For induction, it needs a suitable magnetic base. Cast-iron-style construction or a thick base can retain heat for longer, but often adds weight.

A stainless steel pan is durable and resistant to many kitchen utensils. Without a coating, it requires the right preheating technique to help prevent delicate foods from sticking. Multi-layer models combine stainless steel with an aluminium core to improve heat distribution.

A ceramic pan, or metal pan with a ceramic coating, isn’t the same as a cooking vessel made entirely from ceramic. Check whether the manufacturer lists aluminium or stainless steel as the base material, and look at the temperature and care instructions.

Coatings, utensils and cleaning

For coated surfaces, wooden, silicone or heat-resistant plastic utensils are a cautious choice. Metal turners and scouring pads can damage the surface unless the manufacturer specifically says they’re safe to use.

For low-fat cooking, don’t leave the pan empty over a high heat for a long time. Depending on the food and the manufacturer’s instructions, a small amount of oil or fat may be useful. Let the pan cool before washing it and use a soft sponge.

Care tips to help your pan last longer

  • Before first use, wash the pan with warm water and mild washing-up liquid.
  • Don’t heat coated pans empty on the highest setting.
  • Use wooden, silicone or plastic utensils unless the manufacturer advises otherwise.
  • Don’t plunge a hot pan straight into cold water.
  • With an oven-safe pan, always check the temperature limit for the pan body, handle and lid.
  • Don’t assume that a product listed as dishwasher-safe is completely scratch-resistant.

Frequently asked questions about 28 cm frying pans

Will a 28 cm frying pan work on an induction hob?

Only if the base is magnetic and the manufacturer confirms that it’s suitable for induction. A pan made entirely of aluminium needs an integrated magnetic base. The base diameter should also match the size of the hob.

How long does a coated frying pan last?

Its lifespan depends on heat, utensils, cleaning and how often you use it. Coatings can be damaged by overheating, metal utensils and abrasive sponges. If the surface is visibly damaged, stop using the pan and follow the manufacturer’s advice.

Is a ceramic pan suitable for low-fat cooking?

A ceramic-coated pan can help food release with less oil. However, results depend on the temperature, food and care. “Ceramic coating” doesn’t remove the need to check the material, induction compatibility, temperature limit and cleaning instructions.
