Coated Induction Frying Pan: A Buying Guide for Everyday Cooking, the Oven and Low-Fat Frying

A coated induction frying pan needs to meet several requirements at once: it must be recognised by the induction hob, heat evenly and be easy to clean after cooking. At the same time, non-stick pans vary considerably in terms of coating, temperature limit, size and features.

Many disappointing purchases are not caused by the diameter, but by overlooked details. For example, a pan may be advertised as suitable for induction but only have a small magnetic base. Terms such as ‘ceramic’, ‘granite’ or ‘titanium’ also say little on their own about the actual material composition.

Three common misconceptions when buying induction pans

1. PFOA-free does not automatically mean PFAS-free

Some manufacturers label their coated frying pan as PFOA-free. This refers to a specific substance and should not be equated with a comprehensive PFAS-free claim. If you are specifically looking for a PFAS-free pan, check for clear information about PFAS and, where applicable, PTFE.

This information is provided differently for the products mentioned: according to the product name, the COOKER KING models are described as PFOA-free. For the Naturepan models, the product description states that they have a PTFE-, PFAS- and PFOA-free ceramic coating. This information is based on the respective manufacturers’ specifications and should be checked again on the product page before purchase.

2. Dishwasher suitability can affect the coating’s lifespan

A dishwasher-safe frying pan saves time, but detergents, high temperatures and mechanical movement can put more strain on coatings. This is why several models recommend washing by hand with a soft sponge despite being dishwasher-safe.

If a pan is expressly intended for hand washing only, it should not be regularly placed in the dishwasher. This applies, for example, to certain SENSARTE models.

3. Oven suitability often depends on the handle and lid

The statement ‘oven-safe up to 260 °C’ does not automatically apply to every component. Plastic or Bakelite handles may have a significantly lower temperature limit. With a pan with lid, you should also check whether the glass lid can be used separately and what maximum temperature applies.

Technical specifications to check before buying

Induction compatibility and base size

An induction pan needs a magnetic base. Alongside the ‘induction-compatible’ label, the following points are relevant:

  • Does the pan base match the size of the cooking zone?
  • Is the base flat and large enough?
  • Is it also suitable for gas, electric and ceramic hobs?
  • Are there any restrictions for halogen or infrared hobs?

A 28 cm model does not necessarily have a 28 cm base. For example, Naturepan specifies a smaller base diameter for various models. This affects how much energy actually reaches the pan on the induction hob.

Type of coating and use of kitchen utensils

A pan with a ceramic coating can be an alternative to PTFE-coated models. The Naturepan products are described as having a ceramic coating with diamond and titanium particles. According to the product description, the ZEROPAN model combines stainless steel with a ceramic coating.

Regardless of the material, the same rule applies: metal turners, knives and scouring sponges can damage the surface. Wooden, silicone or plastic utensils are a more suitable choice for many coated models. Prolonged heating while empty and very high temperatures can also affect the coating.

Size, rim height and features

The right size depends on your household and the quantities you cook:

  • 20 to 24 cm: for one or two portions, eggs, pancakes or smaller side dishes
  • 26 to 28 cm: for several portions and everyday household cooking
  • Deep frying pan: suitable for sauces, casseroles, vegetables and one-pot dishes
  • Crepe pan: shallow rim for crepes, pancakes, tortillas or omelettes
  • Pan with lid: useful for steamed and braised dishes

A removable handle can also be practical, for example for storage or moving the pan from the hob to the oven. With the Tefal Ingenio model, however, the handle is not included with the pan.

Care tips for a long-lasting non-stick frying pan

  • Do not heat the pan empty on a high setting for a prolonged period.
  • Start by using induction at low to medium power.
  • Choose wooden, silicone or plastic utensils.
  • Do not plunge hot pans straight into cold water.
  • Clean the coating with mild washing-up liquid and a soft sponge.
  • Follow the manufacturer’s instructions for oven use, dishwasher use and removable handles.

A pan that is easy to care for does not remain usable for a long time simply because of its material description. The right temperatures, suitable kitchen utensils and cleaning without abrasive products are what really matter.

Frequently asked questions about coated induction frying pans

Which coated frying pan is suitable for induction?

Suitable models are those expressly stated to be induction-compatible and fitted with a magnetic base. The base diameter should also match the cooking zone. With a large pan that has a small base, heat distribution around the rim may be less even.

How long does a non-stick pan coating last?

It is not possible to give a reliable fixed lifespan for every model. It depends on temperature, frequency of use, utensils and cleaning. Prolonged heating while empty, metal tools and abrasive products can accelerate wear. A damaged coating should no longer be used.

Is a dishwasher-safe frying pan worth it?

That depends on your daily routine. A dishwasher reduces the effort involved in cleaning, while hand washing is often gentler on the surface. Even when a pan is clearly stated to be dishwasher-safe, washing it by hand with a soft sponge may put less strain on the coating during everyday use.
