Kitchen Knife Set: How to Choose the Right Knives, Materials and Storage

A complete kitchen knife set can make daily food preparation much more organised. Instead of selecting individual knives, scissors and storage separately, you receive several coordinated tools. However, the number of pieces alone says little about how practical the set really is for everyday use. The key factors are the types of knives, blade material, care instructions and suitable storage.

Common pitfalls when buying a kitchen knife set

1. Lots of pieces, but limited practical coverage

An 11-piece set may initially sound comprehensive. However, it could contain several steak knives while lacking a bread knife, a suitable chef’s knife or kitchen scissors. For everyday use, it is therefore not just the number of pieces that matters, but how they are distributed:

  • Chef’s knife or Santoku for vegetables, herbs and larger ingredients
  • Paring or vegetable knife for small, precise tasks
  • Bread knife with a serrated edge for bread and baked goods
  • Meat or carving knife for roasts and larger cuts
  • Kitchen scissors and, where appropriate, a honing steel

A 5-piece knife set may be more useful for a small household than a larger set containing many rarely used knives.

2. “Sharp” without any care information

A blade does not automatically stay sharp forever. The cutting board, cleaning method and storage all affect its service life. Information such as FRIODUR-ice-hardened, forged construction or a particular steel hardness describes how the knife is made, but does not replace regular care.

Check whether the set is dishwasher-safe. Hand washing is recommended or expressly required for several ZWILLING sets. Temperature, cleaning agents and contact with other cutlery can place greater strain on both the blade and the handle.

3. The knife block does not suit your kitchen

A knife set with a knife block keeps loose knives out of drawers, but requires a stable surface. Wooden blocks should generally not be soaked. With a magnetic stand, the base must be secure and the blades should be placed on it carefully. Before buying, it is worth checking the dimensions, weight and where it will stand next to the hob or worktop.

The most important buying criteria

Knife types to suit your cooking routine

For everyday food preparation, a chef’s knife measuring 18 to 20 cm is often the central item. A Santoku can be a good alternative if you regularly chop vegetables and herbs or prepare smaller pieces of meat. A paring knife measuring 8 to 10 cm is useful for precise tasks such as trimming, peeling and removing cores or stones.

Anyone who regularly buys bread or bakes at home should include a bread knife. For meat dishes, a meat knife set or a set with a carving knife is worth considering. For barbecues and pizza, serrated steak knives are a separate addition; a steak knife set is not a substitute for a complete kitchen knife set.

Steel, hardness and construction

When choosing a set, look for specific details:

  • Stainless steel makes cleaning easier and offers good corrosion resistance.
  • Forged kitchen knives are made from a single piece or through a specified forging process. The precise construction should be stated in the product details.
  • A hardness rating in HRC allows for technical comparison. Some ZWILLING models are listed with a hardness of 55 to 58 HRC.
  • A V-edge or serrated edge serves different purposes. Serrations are particularly suitable for hard crusts, while a smooth edge enables precise cuts.
  • A full tang or low-seam transition between the handle and blade can make cleaning easier.

“German kitchen knives” does not automatically indicate a uniform level of quality. Check the manufacturer’s details, origin, material and care instructions individually.

Storage and care

A knife block protects the blades and reduces the risk of knives being left loose. Self-sharpening systems such as the KiS technology described for the ZWILLING Four Star block are intended only for the specified knives and slots. A kitchen knife set with honing steel also requires the correct technique: a honing steel realigns the cutting edge, but does not remove the same amount of material as a whetstone.

Use wooden or plastic chopping boards rather than glass or stone. Clean knives with warm water and mild washing-up liquid, dry them immediately and only store them once they are completely dry. Even dishwasher-safe models can retain their appearance for longer when washed gently by hand.

Kitchen knife set FAQ

How many knives should a kitchen knife set contain?

For a basic set-up, three to five carefully selected knives are often enough: a chef’s knife, paring knife, bread knife and, depending on your needs, a meat knife or Santoku. A 6-piece knife set or 7-piece knife set is worthwhile if you regularly use the honing steel, scissors and block.

Is a knife block more hygienic than a kitchen drawer?

A knife block keeps the blades separate and protects them from contact with other cutlery. It must be kept dry and clean. A drawer is only suitable if knife guards, a divider or a secure holder is used. Knives should not be left loose inside it.

How long does a kitchen knife set last?

Its service life depends on the steel, construction, cutting surface and care. Hand washing, drying immediately, using a suitable chopping board and regular sharpening can help extend its useful life. Hard materials, bones, frozen food and incorrect cleaning methods can damage the blades.
