Knife Set with Block: A Guide to Choosing the Right Kitchen Knives

A knife set with a knife block can simplify kitchen organisation and replace several individual purchases. However, having a large number of knives does not automatically mean you have the right selection. What matters is which knives are actually included, how the block is designed and how much care it requires.

As a Joybuy Product Recommendation Officer, I assess the available information objectively and explain which points you should check before buying a kitchen knife set.

Common Mistakes When Buying a Knife Set with Block

1. Too many knives, but no suitable everyday knife

Some sets contain speciality knives that are rarely used in a domestic kitchen. For everyday cooking, a chef’s knife, a bread knife and a smaller paring or utility knife are often more useful than several similar blades. If you regularly prepare meat, vegetables or bread, you should compare the knife types and blade lengths before buying.

2. Knife block without sufficient stability

A knife block made from bamboo, beech or plastic needs a stable, level surface. Dimensions such as 36 × 16 × 15 cm can already take up a considerable amount of space on a narrow worktop. The block should also not be placed close to the edge and should not move easily when you remove the knives.

3. Care instructions are overlooked

The description “dishwasher-safe” does not mean that cleaning in the dishwasher is suitable for every use. Heat, detergents and contact with other tableware can put additional strain on the blade and handle. Hand washing is therefore recommended for many sets. A wooden knife block should not be soaked either. Simply wipe it with a slightly damp cloth and dry it thoroughly afterwards.

These Buying Criteria Matter

Knife types and set contents

A classic knife set with a chef’s knife and bread knife covers many kitchen tasks. Depending on your household, the following components may be useful:

  • Chef’s knife with a blade length of around 18 to 20 cm for vegetables, herbs and larger ingredients
  • Bread knife with a serrated edge for bread and baked goods
  • Paring or utility knife for smaller cutting tasks
  • Boning, carving or slicing knife for specific applications
  • Santoku knife for precise cutting of vegetables and meat
  • Kitchen scissors and honing steel as practical additions

A professional kitchen knife set is not necessarily suitable for every household. What matters is whether you will use the additional knives regularly and whether you have enough storage space for them.

Blade material and construction

For many sets, the product details specify rust-resistant speciality steel or stainless steel. The construction and care instructions are also relevant when making your decision. Forged blades made from a single piece can provide a continuous connection between the blade and tang. Some ZWILLING models list SIGMAFORGE and FRIODUR ice-hardening as construction or finishing features.

A hardness rating such as 55 to 58 HRC describes the blade’s Rockwell hardness. It is a technical comparison value, but on its own it does not indicate which knife will feel most comfortable for your particular use. Always cut on a wooden or plastic chopping board and avoid glass, stone and hard frozen foods.

Knife blocks, self-sharpening and hygiene

A beech knife block has a compact, classic appearance, while a bamboo knife block is often lightweight and offers a natural look. Plastic or magnetic stands may require a different amount of space and should also be positioned securely.

A self-sharpening knife block does not work with every type of knife. In the ZWILLING Four Star Set with KiS technology, ceramic sharpening modules are assigned to the corresponding slots. Do not insert knives from other sets into these slots. The knives must also be inserted vertically and without force.

FAQ About Kitchen Knife Sets with Blocks

How many knives should a knife block set contain?

For a typical household, three to five carefully selected knives are often sufficient. A larger set is worthwhile if knives such as a slicing knife, Santoku knife, carving knife or kitchen scissors are actually used regularly.

Is a knife set with a block dishwasher-safe?

This depends on the product. Some sets are described as dishwasher-safe up to a specific temperature, while others are intended exclusively for hand washing. Check the manufacturer’s specific instructions before using the dishwasher for the first time. Wooden blocks should never be soaked.

How long does a kitchen knife stay sharp?

How long the edge remains sharp depends on the blade material, chopping board, cutting technique and care. A honing steel can realign the edge on suitable knives, but it does not replace professional sharpening when a blade is blunt or damaged. A self-sharpening knife block can reduce the care required, but it only works with the knives designed for it.
